Say the sweetness first. Ask for the invoice.
Bring a visiting boss to a house that can still book a room and print a fapiao — not a Xiaohongshu set. Lao Zheng Xing is the 1862 river-fish story under the Xinghualou group; treat the current dining room as a confirm-before-you-promise. Dexing Guan is a Ministry of Commerce time-honoured brand (1878), noodles and Shanghainese plates. Fu 1015 is the private-house register: villa rooms, price, and a booking that fails in English without help. Tell guests the food runs sweet and oily unless you ask. Home cooking is a different list.

Invoice-friendly rooms. Star lists change.
Lei Garden is a Hong Kong seafood group with a live China store list on leigarden.cn — pick the Shanghai room (IFC and iAPM have been the working ones) on the official page, not a memory. Xin Rong Ji is Taizhou seafood, official xinrongji.com; Shanghai has several rooms and they are not interchangeable. Yi Long Court is Peninsula Cantonese with a 2026 Michelin star on the hotel’s own dining page — hotel ritual, hotel bill. Stars are a date, not a personality.
Housing Lujiazui and Jing’an malls make these a lunch. Villa belts make them a Saturday.

Gubei cabinets and Hongquan exhaust — not Bund sushi.
Japanese families eat in Gubei the way they would in a Tokyo ward: fish they can name, language at the counter, a walk after school. That density is why the corridor exists. It is not a Western omakase argument and it is not Nanjing West Road. Korean life after dark sits on Hongquan Lu — barbecue, army stew, noraebang — and the empty daytime shutters do not mean the community left. Exhaust at home is a lease problem the restaurant cannot fix. Ask the Japan Club or Korean parents for the fish shop of the month; advisors do not pretend to be sushi critics.

Jean-Georges at Three on the Bund is the formal French room the group still lists for Shanghai — tasting menus, a jacket culture, official jean-georges.com. Hotel French (Peninsula Sir Elly’s) is a view plus a bill. Daily butter and cheese are a grocery problem: Farine and City Super, not a white tablecloth. Indian, Pakistani and Levant kitchens cluster on Hongqiao and Gubei. Muslim clients ask whether the kitchen is certified, not whether the menu has lamb. Vegetarian temple food is a third list; do not collapse it into “healthy”.

Muslim clients ask whether the kitchen is certified, not whether the menu has lamb. Chinese “vegetarian” often still uses oyster sauce, lard or egg; temple vegetarian is a third list with onion-garlic rules; Indian vegetarian and Jain are a fourth. Do not collapse them into “healthy”. Lawson and FamilyMart bentos are Japanese and Korean survival, not imported groceries. Singaporean households often want a Malay or Hainanese room, not a Thai photo set. Advisors ask the chamber or parent group which door is still open this month.

Sichuan and Hunan are not a “spiciest” list. Ask how much heat a guest can take, whether a private room exists, and whether a fapiao prints. Viral hotpot on Friday is a poor client room. Thai, Vietnamese, Malay and Indonesian kitchens are chosen as home food, especially by Singaporean and Southeast Asian families — not as mall photo sets. Advisors ask the chamber or parent group which room is still open this month. None of this is a school-bus argument unless the household cooks that food every week.
